Cachaca is often regarded as Brazil's answer to rum. Similarly derived from sugarcane, Cachaca is distilled from the freshly pressed juice of the plant rather than the molasses created as a byproduct of sugar production. Also like rum, Cachaca generally falls into two categories: a lighter unaged white or silver variety and a gold variety which is aged in wooden barrels. Many Brazillians enjoy Cachaca served neat, but elsewhere it forms the basis of many tropical cocktails, most notably the capirinha.
