Tom Collins
Ingredients:
Add the lemon juice, gomme syrup and gin to an ice cube filled highball glass. Finish with the soda water and STIR. Garnish with a lemon slice in the glass and serve with a stirrer.
The original Collins was a John Collins and can be traced back to the head wauter at Limmer's, a popular hotel and coffee house in Conduit Street, London arounf 1790 - 1817. His original recipe uses genever, a Dutch-style gin. The drinks was not that popular in America in the 1880's, where it was regarded as an upmarket type of gin sling. When one bartender used Old Tom Gin (a London gin with a sweet flavour), the Collins became more popular and hence acquired its name of "Tom Collins". It is widely accepted that a straight Collins is made with London gin, though you can use any other spirir basem such as brandy, rum or whisky. In America, a John Collins is made with bourbon or whisky.
