Avion Silver is a seriously good blanco tequila. A wonderful option as a mixer, but if you want to be blown away, try it in a glass, neat. This complex, multi layered tequila is great sipping on its own. Unlike many other tequilas, the flavour of agave is front and centre on the nose and to taste. Clear in colour. The nose presents gentle sweet notes of vanilla and pineapple, along with herbaceous characters and savoury tones of agave. A touch of vanilla and coconut flavours on the palate transition into roasted agave with grassy and mineral undertones, along with hints of menthol. It has a clean and velvet feel in the mouth. The finish is dry and savoury, with age and touch of brininess lasting a little while.
This beautifully crafted tequila is well worth trying. The agave is grown at some of the highest elevations in Los Altos, where the volcanic soils impart some of their mineral characteristics into the tequila. The piñas are slow-cooked in traditional clay ovens rather than diffusers or steel ovens. The juice is then distilled in pot stills, which retain the flavours better than larger column stills. The result is a flavourful, complex tequila that's quite sweet on the tongue, but the savour, mineral flavours shine through to balance the sweetness. Avion Silver is an amazingly well balanced tequila, reflecting the terroir and putting the agave front and centre without any barrel ageing to obscure it.
