Ailsa Bay Sweet Smoke has superceded the Ailsa Bay's first single malt expression, that was released in 2016. The whisky undergoes a 'micro maturation' process in small Hudson whiskey casks, like its predecessor. The difference is that Release 1.2 has a sweeter flavour profile than the original. Sweet Smoke is measured at 19 SPPM (sweetness parts per million), while the first one had just 11 SSPM. And to achieve a balance between smoke and sweetness, it is also slightly peatier, registering at 22 PPPM (phenol parts per million) as compared to 21 PPPM before. On the proboscis, Sweet Smoke exhibits fresh wood smoke with notes of smoldering damp heather. To taste, it has smoke, fruit and creamy toffee characteristics. The packaging takes its inspiration from the creative science that has gone into producing this rather scientific single malt.
